MY FOCUS

I enjoy working with clients with an array of health and diet concerns, but have a particular interest in:
• gut and digestive health
• geriatric nutrition
• weight loss
• blood sugar regulation
• skin health
• elimination diets
• pre and post surgical support
• autoimmune conditions
• kids nutrition
• anti-aging
I have used the following dietary templates to help clients achieve their goals: Paleo and Whole 30, Keto, AIP (Auto Immune Protocol),PHD (Perfect Health Diet), GAPS (Gut and Psychology Syndrome) and Weston A. Price (WAPF). As a holistic nutrition consultant during the initial intake meeting, I strive to gather as much information about my clients' current lifestyle and history, current nutritional status, medical status, stressors and digestive issues or complaints. This information helps to guide me in providing them with customized nutrition recommendations and meal plans. I strive to motivate, challenge and inspire clients in an individual or group setting, enabling them to work towards their goals. Nothing is more satisfying than to see the clients I work with succeed.

MY PHILOSOPHY

I believe that eating nutritious food is one of the major foundations of life, and a key component to maximizing ones potential as a human being. I love searching for the best possible ingredients and the most trusted and sustainable sources of meat, fish, eggs and produce. I think it’s important to be a responsible consumer and take ownership of the food you purchase. Getting to know and support your local farmer, talking to your grocers and making conscious and informed decisions is the first step to taking good food home to your kitchen. Being empowered to make the best possible decisions is what inspires me and drives me to want to learn more everyday. This is what I strive to instill in others- a sense of empowerment and awareness. Ask the hard questions and don’t be afraid to stand up for what you think is right. Be your own advocate and do your research. Take your health and your wellbeing into your own hands!

WHY THE NAME BLUE COAST?

I grew up on the coast of California and have always lived a stones throw away from the ocean. My husband is a professional sailor and wherever we live for his job is in a coastal city. We both feel connected to the ocean, and it is often the backdrop for quality family time together. As John F. Kennedy once said in a speech at a dinner for the Americas Cup, "We are all joined by a common interest, a common devotion and love for the sea. We have the same percentage of salt in our blood, in our sweat & in our tears that exists in the ocean. We are tied to the ocean and when we go back to the sea whether it is to sail or watch it, we are going back from whence we came."

MY STORY

Hi there! My name is Jennifer Spithill and I grew up in San Diego before completing my undergraduate degree at UC Santa Barbara, earning a BA in Environmental Studies. I worked in my field for a few years after graduating, then took a job in Auckland, New Zealand where I met my Australian husband. We have since lived in Sydney, San Diego, Spain, San Francisco, Bermuda, Italy and New Zealand for his job. While living in San Francisco, I attended Bauman College and graduated with honors from the Nutrition Consultant Program. Growing up, food and family were cherished times and we all looked forward to the next meal together. Part of planning trips and get-togethers greatly revolves around food and putting love into creating a dish to share with each other. To me this is one of lifes simplest pleasures.

Our family traditions have stayed the same but the food has changed. About 6 years ago we discovered the Weston A. Price Foundation and started incorporating more traditional foods like liver, pastured butter and fermented grains into our diet. After uncovering some hormonal imbalances and poor gut health of my own, I have continued down a path of 'diet discovery' which eventually led me to the Paleo diet and lifestyle. I love knowing that the foods we choose to eat as a family are sustainably sourced, nourishing and healthy.

We now reside in sunny Southern California with our two sons and cats. My days are filled with staying physically active, working with clients, experimenting in the kitchen, and taking care of our kids. I enjoy running, barre workouts, hot yoga and bike riding.

HEALTHIER TOGETHER

It is truly astonishing to me how much we can control our own wellbeing by what we put into our bodies. This is the part I find most exciting- the fact that we can largely control our health by what we choose on a menu at a restaurant, or what we choose to cook at home. The power is in our hands and I am here to educate, guide, and motivate. I love helping people and find it incredibly gratifying to witness clients improve their health and get excited with their newfound knowledge. On my own personal journey, I have learned which foods make me feel good and which foods are best for my body. It’s about being able to make the best decisions for myself and not having to be perfect 100% of the time, but having the knowledge and power to make mindful decisions about my choices everyday.
As a nutrition consultant I work with clients to get an overall picture of their health and wellbeing. This includes current diet, stress, physical activity, sleep, and potential environmental toxins. I aim to help restore wellness from the inside out, and treat each client as an individual with their own personal dietary and lifestyle needs. Consultations include an intake evaluation, current diet evaluation, customized meal plans, recipes and lifestyle goals. I also offer pantry clean-outs, grocery store visits, and group challenges as a way to stay motivated and to be held accountable.
