Ginger Carrot Soup

This is the soup I crave when I'm wanting something nourishing and warming.  It's fairly simple to prepare and can be a wonderful dinner or lunch on it's own, or can be paired with some protein and a salad for a more substantial meal.  

In herbal medicine ginger is known to relax and soothe the intestinal tract, as well as having antioxidant and anti-inflammatory properties.  Homemade chicken broth contains gelatin (which is found in the joints and knuckles of the bones) and is incredibly beneficial for the gut as it helps to protect and heal the mucosal lining of the digestive tract. Broth also aids in digestion and the absorption of nutrients.  Be prepared for some crazy gut healing and anti-inflammatory benefits when eating this soup!

Blue Coast Nutrition Carrot Soup

Ingredients:

  • 1 yellow onion chopped
  • 1 tbsp. coconut oil
  • 6 cups of chicken broth
  • 2 inch piece of ginger finely grated
  • 8 medium carrots (or 6-7 large) chopped
  • 1 cup full-fat coconut milk
  • salt to taste

Directions:

1) In a soup pot over stove top, saute onions in coconut oil over medium heat for 5 minutes or until translucent

2) Add grated ginger and stir until fragrant about 30 second to 1 minute.

3) Add chicken broth and carrots and reduce heat to medium-low, simmering for approximately 45 minutes to an hour or until carrots are very soft

4) Remove from heat, then use an immersion blender to puree. Stir in coconut milk and add salt to taste!
